✓ Vegan Lactic acid (E270) is vegan. It got its name in 1780 because it was first isolated from sour milk, but commercial lactic acid is made by fermenting plant sugars from corn, cassava, beet or cane. The finished acid contains no dairy. Lactose is the milk sugar, and that is a completely different ingredient.
Why "lactic acid" sounds like dairy
In 1780 the Swedish chemist Carl Wilhelm Scheele worked on a sample of soured milk and pulled out an acid nobody had described before. He named it after the place he found it. Latin lac, genitive lactis, means milk, and the label has stuck for two and a half centuries.
That is the whole connection. The name records where the molecule was first noticed, not what it is built from today. Lactic acid is a small organic acid (2-hydroxypropanoic acid, formally), and bacteria make it out of sugar. Souring milk is only one of the places that happens to occur.
It happens in your own muscles during hard exercise, in sauerkraut, in a sourdough starter, in kimchi, in brined olives and in nearly every pickle in the jar. None of that involves an animal.
How E270 is actually manufactured today
Two production routes are legally recognised, and both regulators allow either one. The EU specification in Commission Regulation (EU) No 231/2012 defines E270 as a mixture of lactic acid and lactic acid lactate "obtained by the lactic fermentation of sugars or prepared synthetically". The US GRAS listing at 21 CFR 184.1061 spells the synthetic route out: lactonitrile formed from acetaldehyde and hydrogen cyanide, then hydrolysed.
Fermentation wins in practice, partly on cost and partly because it yields the single L(+) form that food manufacturers prefer. Bacteria, usually Lactobacillus species, are fed a sugar stream and convert it to lactic acid, which is then filtered and purified.
The sugar stream is where the vegan question actually lives, and it is plant material. Corbion, one of the largest producers in the world, describes its process as fermenting sugar, and the crops behind that sugar are the ordinary first-generation feedstocks: cane, beet, corn and cassava. Nothing on that list came from an animal.
The rules do also allow lactose as a substrate: the US listing names glucose, sucrose and lactose as its example carbohydrates, and a handful of producers have historically fermented whey. Two things keep that from being a practical worry. Whey is expensive next to corn dextrose, and in the EU "milk and products thereof" is a declarable allergen under Regulation (EU) No 1169/2011, with only two carve-outs (lactitol, and whey used for alcoholic distillates). A whey-derived E270 in a prepacked European food would have to say so on the label, which is the same allergen logic that makes E322 lecithin easy to check.
Lactic acid vs lactose vs lactalbumin: the "lact-" family
Most of the panic comes from pattern-matching on four letters. These words look related and behave nothing alike, so it is worth learning the family once.

Read it twice and you have solved most of the "lact-" problem for good. Five entries are milk-derived, one is genuinely ambiguous, and the other two are plant fermentation products. The same trick works on every misleading label word, which is what reading food labels as a vegan comes down to.
No need to hold that table in your head mid-aisle:
- Paste or type the whole ingredient list into ingredient analysis and get a verdict on every entry at once, not just the one that worried you.
- Use the E-number checker on any code you do not recognise, so E270 and the lactate salts stop reading as the same thing as lactose, lactalbumin or casein.
- Anything genuinely uncertain comes back flagged with the reason, so you know which single word to chase rather than abandoning the product.
E270 and its lactate salts, additive by additive
The lactates (E325, E326 and E327) are made by neutralising lactic acid with a sodium, potassium or calcium base. They inherit whatever the acid was made from, which in commercial practice means plant sugar. You will see them in bread, chilled products and sports drinks, doing jobs like moisture control, pH adjustment and shelf-life extension.

In the EU, lactic acid is a group I additive under Regulation (EC) No 1333/2008 and is permitted at quantum satis across many food categories. One restriction is worth knowing: in infant and follow-on formula, only the L(+) form is permitted, because the D form is not handled well by very young digestive systems. In the US it is simply GRAS, used according to good manufacturing practice with no numeric limit.
The additive that actually deserves your attention: E472b
This is the entry that actually rewards a second look. E472b is not lactic acid. It is lactic acid chemically bonded to mono- and diglycerides of fatty acids, and that second half is the same molecule you meet as E471, whose specification permits fats of either plant or animal origin. The lactic acid half is not the issue. The fat backbone is.
EFSA has looked at this family in its 2020 re-evaluation of E472a to E472f, but that assessment covers safety, not sourcing. No regulator requires the fat origin to appear on the ingredient list, so a label that says "emulsifier: E472b" tells you nothing about the animal question. The stearoyl lactylates E481 and E482 sit in the same position: their stearic acid is usually palm or soy, but tallow-derived stearic acid exists.
If a label says lactic acid, stop worrying and read the rest of the list. The word that should slow you down is E472b, where the lactic acid is fine and the fat it is bonded to may not be.
Ask the manufacturer, or prefer products that spell out "vegetable" next to the emulsifier. Certified vegan products containing E472b have already had that conversation for you. Other habitually ambiguous entries sit in our list of E-numbers that are not vegan.
When a product containing lactic acid genuinely is not vegan
The additive is fine. The product around it sometimes is not, and there are three situations worth naming.
Dairy fermentation
Yoghurt, sour cream, buttermilk, crème fraîche and most cheese list "lactic acid" or "lactic cultures" because bacteria have fermented the milk itself. Nothing is wrong with the acid. The milk is the problem, along with any animal rennet used to set the curd. A single word on a cheese label never rescues it.
Culture media
Starter cultures are grown on a nutrient medium before use, and some media are dairy-based. This is a genuine edge case, and it almost never appears on a label. Most vegans treat it as beyond the reasonable-and-practicable line, but only the manufacturer can answer it for certain.
Meat carcass sprays
Search for lactic acid and you will hit results about slaughterhouses. Commission Regulation (EU) No 101/2013 permits solutions of 2 to 5 per cent lactic acid in potable water, at up to 55°C, to reduce surface contamination on whole bovine carcasses, half-carcasses and quarters. It has no bearing on a vegan shopper: the thing being sprayed is beef. It only explains why the search results look alarming.
None of these three make E270 itself non-vegan. They are cases where the rest of the ingredient list was already the problem, which is the recurring lesson in our roundup of hidden animal ingredients.

Is lactic acid dairy free?
